Who does not love macarons! Even if they are very sugary and not the healthiest option, sometimes they are just the best that can happen. And I really love to make them. Its process comes close to meditation. Macarons takes its time but it is worthwhile! I mean look at them, they are so gorgeous and a perfect small gift!
This time I made four different flavors: Vanilla-Baileys, strawberry, pistachio and chocolate-espresso. The first three are filled with butter cream and the chocolate ones with chocolate ganache.
When you make macarons it is very imported to you work exact to get a good result. So never overheat the sugar. Its perfect temperature is at 115 degrees celsius. And the dough should be fluffy with a perfect consistency: kind of liquid but not too liquid.
But even if your macarons do not look perfekt they going to take great anyway! So go for it and give it a try and just have a good time while making them
Macaron: finely ground almonds, powder sugar, sugar, water, egg white, food coloring
Butter cream: butter, powder suger, finely ground almonds, depending on the taste: pistachio, strawberry or vanilla and baileys
Chocolate ganache: dark chocolate (55-70%), heavy cream, sugar, butter, ground coffee
